Vegan melted cheese and veggies on bagel



In the mornings I love bagels and I love to spruce my bagel up with some hummus or vegan cheese like daiya, chop up some veggies and throw them on top. I usually top with tomatoes or avocado. Here I topped with some organic spinach and cherry tomatoes. Yum yum. Always get those items organic if you can. I don't usually get my bananas or oranges organic because I peel them but a lot of times I do. Anything I eat the skin of I always do but still wash thoroughly :> 

New vegan items from Free People!

Free People has some rad vegan selections from purses and other fashionable finds to goodies like vegan cookie mixes. I found a great Hot Chocolate from etsy shop Fair Isle and some vegan pancake mix for a gift. So delicious, organic and VEGAN!! :D woohoo! if you go to Free People site just type in vegan in search and loads of fun items will come up. Hurrah to them for having so many compassionate choices.





Compassionate Thanksgiving

I hope you all had a compassionate Thanksgiving free of cruelty :D I know I did! I found this delicious chick pea and green bean dish and some vegan mushroom turn overs on Monamifrost's youtube channel and made that my main dish and we made mushroom gravy plus stuffing and had some root vegetables. Delicious!

Grasshoppers and parks!


Went to the park with a friend and later made a snack for dinner and watched a cute little grass hopper who got into my house. I always feed the house guests so I got him a fresh little pea. He ate it up. He was so super cute! He reminded me of a Jake so I called him Jake. 



Mmm delicious vegan patty, steamed carrots, sliced avocado and collard greens from our garden. I can't wait to garden again when we get our new house :D 


Here is the adorable little grasshopper who got into the house feasting on the pea I gave him. Hehe I love little critters. He got back outside okay. 

More vegan comfort food!

Mmmm nothing beats a warm, vegan grilled cheese and tomato soup! 



Stir fry for a snack! 


A healthy grape, walnut and spinach salad with balsamic and olive oil. 


Sliced and cooked sweet potatoes ! SOoo delish :D Just chop em and put em in the oven. 
Sometimes I rub a bit of olive oil and sea salt on top before I bake. 


I loooove vegan tacos! Black beans, refried from Whole Foods! (get the organic kind) 
organic, chopped spinach and sliced avocado. Taco shells, vegan sour cream and salsa. 

Vegan cook book review


SO excited this arrived on my porch. I dove into it immediately. I have already made several dishes. I love this vegan book and author because she seems super chill and cool and her recipes are easy to make. I found a lot of items at my local safeway or trader joes. I travel quite often so sometimes it is hard to find where to get vegan food and I always try to rent a flat or a place I can cook for myself. 

I definitely recommend this book. It is so awesome. I got my copy off of Amazon. I love going through and looking at the pics and finding what I want to make next. I can't wait to make the donuts. My husband and I are such hardcore foodies. I can't wait to make more recipes in Mary's book. 

How to humanely trap a rat



There was a little baby rat or maybe he was a teenager? Not sure but he was in my home. I don't want any rodents harmed because I loove animals and so I walked up to him gingerly and placed a little bowl on top and then placed cardboard underneath and put him in a little cage that I had. Later I let them go. It is not hard to trap a rat if you are gently and if they run away you can always put some peanut butter and lettuce down or another type of food like bananas or potatoes they might eat. They have human rat traps at places like PETA and other places online! Good luck with helping your little rodent get back to the out doors :D they are so super cute. My backyard is like a forest.

Had some vegan sushi from Garden Fresh. Looove that place! 

Made some vegan, blueberry pancakes. 



Later snacked on some vegan ranch with chopped celery. 

Hiking and art fest








I went to a lovely art festival in Woodside called Kings Mountain Art fest. It was really fun and we took loads of pictures. If you are in the Bay Area go and check it out. 


What vegans eat


We picked up peaches at Di Martinis and made vegan peach cobbler. 


I later grabbed some vegan donuts at whole foods to go with my soy latte. 


For dinner I made a loaded baked potato with vegan cheese, topped with avocado, vegan sour cream and green onions. This is one of my favorite low fat dishes. Sometimes I add a tiny bit of vegan butter if I want it extra creamy. It is so cheap and easy to make this! 



A few weeks ago I made mini vegan pumpkin loafs! 


Vegan Pho' Yumm! just make sure the place you go does not have fish juice! or makes it without it OR you can make your own. We make our own vegan pho' quite often. 

Vegan goodies

Last week my husband made a wonderful tofu vindaloo dish complete with carrots, spices peas, potato, firm tofu,  and onions. It is lovely to have over some brown rice. 

Later I got a vegan cookie and coffee at Peets and had a midnight snack of half a coup of vegan ice cream with a vegan cookie on top. I love the vegan cookies at Trader Joes. Yum Yum!

Vegan spice, pumpkin pie

I think what makes this one of the better tasting vegan pumpkin pies I have made is the amount of spices I put in. I put extra all spice along with cinnamon and more vanilla. This pie was the best one I think I've ever made. I found the recipe on food network channel. Fall and Winter are my favorite seasons and I could not wait until then to make this. I used a non dairy whip cream from Whole Foods that I found that was completely vegan. Be careful when choosing whip cream because some of them that say they are dairy free still have some actual animal products or dairy in it.


Gluten free toast with almond butter and bananas

I love having bananas and simple gluten free bread, toasted with almond butter for breakfast. It is a simple and easy thing to have in the morning when I don't have a lot of time.





Vegan root beer float

I made a vegan root beer float using non dairy ice cream from Whole Foods and organic root beer. It was delicious. It isn't hard to make at all and I like to serve them in traditional beer mugs.

Santa Cruz vegan food


I went to Santa Cruz but before I headed there I made myself some raw vegan ice cream. I took two frozen bananas, frozen grapes (handful) some almond butter and a splash of vanilla and a bit of almond milk and mixed it in blender. This is so delicious!

Raw vegan fudge

This is one of the most simple recipes I've ever made. I have seen this multiple times online and on youtube videos.

All you need is 1 cup of dates (pitted)
                         1 cup of raw, unsalted Macadamias
                         a splash of vanilla blend all together in mixer/freeze for 4 hours and cut into small squares and voila! you have delicious raw fudge with no additives or unnatural sugar!

This is a particularly lovely recipe to make during summer months because it gets so darn hot! Place back in freezer after you munch and then have a few more pieces in the evening. Each piece is about 80-90 calories depending on how small/big you cut your fudge. Enjoy!
