Happy Thanksgiving

I enjoy spending time with family and promoting veggie eating. I took my dog for  a long stroll in the park with my husband and spent time with family. We had stuffing and veggies, made two pies and when we got home we made an amazing vegan casserole we saw in Vegetarian Times. We forgot the chickpeas (whoops) but it was delicious anyways.

Chewy chocolate chip cookies

I got this recipe from Nom Yourself. These were seriously the best vegan chocolate chip cookies I have ever had. My husband and I were really craving warm, chewy cookies and I happened upon a picture on instagram. Check out that site. I can't wait until the cook book comes out!! I need to make more recipes from the site.

My week thus far

There is my adorable pup. I love her. 

I was craving the apple pie pancakes from Vegan a Go Go book so I made them. They are very simple to make but taste delicious!! I paired it with maple syrup, some maple toasted pecans I made and some vegan cookie butter. My sister in law first introduced it to me. 

Delicious raw food!! Yum!! :D 

A lovely oatmeal I made with mashed bananas, toasted coconut flakes, earth balance and raisins. This is super delicious if you top it with some almond or hemp milk as well. It has a nutty flavor.

Toasted maple pecans

A perfect holiday treat is toasted maple pecans. I found this recipe online. It is delicious. You just use a bit of sugar a few tablespoons of maple syrup. Coat your pecans and place them on a pan lined with parchment paper. Put in oven for about 20 minutes at 350 degrees and voila! You can do it for less than that if your oven happens to be very hot.

Vegan gothic pre Halloween inspired cupcakes

Me and one of my best buds got together to make vegan Halloween inspired cupcakes. We like to make things early and taste test them before the holidays ;)

We used silken tofu for a binder but I'm sure cornstarch or something along those lines would work too. Fruit is also perfect for a binder. I mash a banana up in a small bowl before I add. These pics are also proof that skinny bitches love to bake delicious sweets. We love cupcakes :>

Fall is almost here

I love all the super yummy things to eat in the fall. I crave vegan pumpkin pie year round and I found a perfect recipe. This pumpkin pie doesn't fall apart like other ones I've tried to make. I got this recipe from one of my favorite books, "Vegan a Go Go" It is so awesome and easy to make!

Cafe' hopping and breakfast post

I have been having a lot of fun taking pictures of my different breakfasts and cafe' hopping with friends this week as well. You can get a non dairy option at almost any cafe'. On the rare occasion that I can't I always bring my small flask of soy or coconut creamer with me. 

Quinoa and steel cut oats with brown sugar, nuts and mashed banana. 

Oatmeal with sliced bananas, walnuts, raisins and flax seeds. 

Coffee with vegan creamer, gluten free bread and almond butter with organic, sliced cantaloupe from an open air market on the side. I love farmer's markets and open air markets. Buy local!

Rye bread with organic raspberry jam and nut butter. 

Fresh, organic raspberries and coffee with vanilla creamer. 

Sometimes I have stirfry for breakfast. Yum!! Organic veggies: broccoli, garlic, white zucchini, snow peas, red bell, maui sweet onion and seared tofu with sesame oil and sesame seeds.

My breakfasts and late night snacks

I find that fruit or veggies are great snacks late at night. Some people don't eat past a certain time but I think that it is fine to eat late as long as it is a few hours before your bed time. 

I love hummus on corn crisps for breakfast. Protein :> 

I regularly have oats topped with flax seeds or a nut butter and all sorts of other goodies. This day I had some peaches inside oats with almond milk poured over and pluots on side. 

This is for you junk food vegans. Sometimes I splurge in the evening after a good meal and have some yummy organic vegan ice cream. Yumm yummm 

I have avocado for late night snacks sometimes if I need extra fat and also I eat them for breakfasts stuffed with fresh yummy goodies from my garden.

Chewy vegan peanut butter cookies

I found this amazing recipe online here: Chewy vegan peanut butter cookies. The only thing I changed is I added banana in place of other egg replacers. This turned out great! SOOOO good. You must make some :D You can add in any fruit you like or just do it exactly like the recipe.

Vegan banana bread with walnuts

I adapted a recipe from PETA. This was SO delicious. The only thing I did different was I used a bit of cinnamon and a tiny bit more banana for the recipe. Slice it up while it is warm and put some earth balance on it. Enjoy with a mug of hemp milk.

Carrots and veggies with black sesame seeds

Tonight my husband made carrots with shallots, garlic, onions and black sesame seeds with sesame oil. It was so delicious. The trick is to cut the carrots very thin.

Recipe

4 large carrots (julienned)
3-4 scallions (chopped)
2 shallots (chopped)
3 1/2 cloves of garlic (or less depending on how garlicky you'd like it)
2 tbs of black sesame seeds
2 tbs of sesame oil

Directions

Heat oil in large pan on medium high heat
Place shallots in for a minute, add the carrots and stir
(Use a bit of water for steaming about half a cup) and cook for 8 minutes as you cook until carrots are tender, add garlic and scallions, cook for another 5 minutes and top with sesame seeds
Add a pinch of sea salt to taste.

Fiona Apple show in San Francisco

Last year my husband and friends and I went to see Fiona Apple at the Warfield in San Francisco. She is one of my favorite artists of all time. I love her so much. The show was amazing and I hope to someday see her play again. I got a lovely poster I need to frame.

Clothing Swaps! Reuse, recycle and shop in your friends closets!

I love recycling and try to do it as often as possible. One of my favorite ways to recycle is having clothing swaps. It is awesome, you can help friends, you get cool clothing for free and they do too plus you are eliminating waste and travel expenses that would be spent on boxes, air flights etc if you ordered online. Not that I never order online. I do! but I try to buy local when possible or have clothing swaps with friends. It is awesome and a fun way to spend time.
