Vegan thai noodle dish and chili

 The other night I made Trader Joe's vegan thai noodles and tofu dish and steamed a side of broccolini. It was so delicious. On the side my friend and I made home made chili with veggies and beans and topped it with brussels sprouts. It was actually really delicious.





Nekter juice bar review

A new all vegan juice bar opened up near my house. I am obsessed! it is amazing and everything I have had there so far is so delicious. They have great juices, smoothies and super tasty acai bowls. Below are just a few of the fresh, raw things I have ordered.

This was sooo delicious. I had the date nut drink. So perfect if you need some calories and forgot to eat. I love how it has nut meg and dates in it. It is so so good. Just try it. 

Someone there recommended the pitaya bowl. Perfect if you are in a tropical mood. I loved the coconut and banana topping. I could eat this every day. 

Pink Flamingo drink is sooooo good!! 

Today one of the guys at the bar recommended the pb bowl. It is peanut butter, acai, strawberries and hemp granola plus much much more. It is perfect for a protein meal!

Almond Banana milkshake

I love making home made banana and almond milk shakes. So delicious. All I do is freeze one to two bananas and put a cup or so of almond milk and blend. Just sweeten with agave nectar or organic sugar and top with cinnamon. It's so simple and easy!

Veganizing cookbooks

I recently found an amazing cookbook with a really cool concept called the Forest Feast. I personally like to get any kind of cookbook and veganize it. I enjoy the challenge and I love doing my own thing. Here is the first dish that I veganized. I just used vegan cheese instead of the cheese she asks for in the book and I left out the pine nuts and capers since I did not have any in the house. Here is the lovely Asparagus tart. I made mine with white asparagus for a change and added minced chives since that is what I had around the house. The book is not entirely vegan it is mostly lacto ovo but it is SO easy to veganize almost any cookbook. Give it a try if you ever get the chance :D I hope she comes out with an all vegan cookbook some day. I would love to meet this author she seems very sweet. I will be posting more veganized versions of different cookbook's recipes in the future.



Vegan Donuts and Coffee

I love love love Whole Foods selection of vegan donuts. I picked up strawberry, cinnamon, blueberry and an orange colored one. My room mate and I ate them all in one sitting. We thought since there was a storm coming we better stock up on delicious vegan treats before we put on our favorite horror movies and snuggle up in warm blankets. To my Pacifca and Santa Cruz friends please stay safe in the storm <3

Veggie Grill and Banana bread with walnuts and cinnamon

I was in the mood for comfort food. I went to Veggie Grill last week and got a delicious fried veggie chicken dish. It was sooo good! you must try it. I got a side of fries with dipping sauces as well and shared everything with my husband. I went home later and made a delicious banana bread recipe with walnuts. To make it very soft I put oil, three bananas and baking powder inside. I also put loads of cinnamon in. Here is the recipe that I copied but I added the cinnamon. I also decided not to use soy yogurt since I only had almond milk. It came out amazing though!

Happy Compassionate Thanksgiving!!

I hope you all had a lovely and compassionate Thanksgiving. My sister made the most delicious vegan dinner for me. She had samosas with sauce, cornbread stuffing made with veggie stalk, rolls,  collard greens, vegan dip with chips, various vegan beers/wines and my husband made a delicious vegan apple crumble.
